This knife is a collaboration between Tadafusa, a renowned Japanese knife maker, Kaneko Sougyo, a specialist in wooden craftsmanship, and Murano Kajiya.
These three Sanjo-based companies, each carrying on the city’s long standing blade-making tradition, worked together to create this Naguri knife series.
■ Gyuto Knife
The Gyuto is a versatile Japanese chef’s knife featuring a longer blade and pointed tip compared to a Santoku knife.
It is ideal for slicing meat, fish, vegetables, and larger ingredients that can be difficult to handle with smaller knives.
The curved tip allows for precise cuts and easy scoring of meat and fish.
It is especially convenient for cutting large cuts of meat into smaller portions, making dishes like roast beef much easier to prepare.
■ Naguri-Textured Handle
Naguri is a traditional Japanese woodworking technique in which textured carving marks are intentionally left on the wood surface.
Originally used in Japanese architecture, this centuries-old craft creates a distinctive uneven texture that fits comfortably in the hand while adding unique visual appeal.
The handle is made from durable Wenge wood, known for its beautiful grain and deep dark-brown colour, giving the knife a luxurious and weighty appearance.
■ SLD Steel Blade
The blade is made from SLD steel, a premium alloy steel known for its hardness, toughness, and excellent wear resistance.
Its long-lasting sharpness makes it a popular choice for high-end knives.
SLD steel contains chromium, carbon, molybdenum, vanadium, and other special alloy elements, making it highly resistant to rust while maintaining excellent cutting performance.
Unlike traditional carbon steel, SLD steel is extremely rust-resistant, though regular care is still recommended.
It is also relatively easy to sharpen among hard steels, allowing the knife to be enjoyed for many years with proper maintenance.
A subtle Murano Kajiya logo engraved on the blade adds an elegant finishing touch.
■ Nashiji Finish on the Blade
The blade surface features a traditional Nashiji (pear-skin) finish.
This textured finish helps prevent food from sticking to the blade while also enhancing the knife’s premium appearance.
